If you are teaching them to helm, then use almost anything roomy and stable, with a reduced sail plan, should work. I''ve used a 505 once, and a Javelin many times. Tempest Keel

To answer Ed's question about lifting the keel, I believe each boat should have a winch on a tripod that you attach when you need it and then store somewhere (like the lazarette). I haven't seen one but was told about them when I thought about buying a Tempest once.

that last ebay Hornet

I think that last Hornet has been hanging around the yard for at least a year without a cover (during the day at least). Personally I suggest an inspection.
